4 cups hot water
1 can crushed tomatoes (28 oz)
3 medium potatoes, peeled and diced
3 medium carrots, thinly sliced
1 large onion , chopped
1 celery ribs, chopped
1 cup dry lentils
2 garlic cloves, minced
2 bay leaves
4 teaspoons curry powder
1 1/2 teaspoon salt (optional)
Stir and cook for 8 hours. Removes bay leaves before eating.
The curry is not very strong in this dish. But, it provides a nice contrast with the tomatoes. I recommend adding the salt. It's a bit bland without it.
